Baking with Miss Hall:

This week we are baking Rock Buns!

I suggest you watch the video through first and then have a go.

225g/8oz Self Raising Flour
75g/2.5oz Caster Sugar
1 tsp Baking Powder
125g/4.5oz unsalted butter, cut into cubes
150g/5.5oz dried fruit (whatever mix you like!)
1 egg
1 tbsp milk (may need another one or two)

Preheat the oven to 180c/160c fan/gas 4 and line two trays with baking paper

Put the flour, sugar, baking powder and butter into a large bowl and rub the mixture together until it forms a breadcrumb texture. Then mix in the dried fruit, breaking up any clumps.

Beat the milk and egg together and add to the breadcrumb mixture.

Mix until it comes together into a lumpy dough, you may need a little more milk at this point.

Use two spoons to scoop the mixture onto the baking trays, leaving a gap for spreading in the oven.

Bake for 15-20 minutes until golden brown. Remove from the oven and place on a wire rack to cool.

Best enjoyed slightly warm from the oven!

Hope you enjoy baking with me today - please share your pictures and show me your lovely moon cakes x
